BURLINGTON COUNTRY CLUB, Burlington, Vermont EXECUTIVE CHEF
FACILITIES DESCRIPTION: Built in 1924, the Burlington Country Club is a private club featuring an 18 hole bent grass golf course with water in play. The original design was created by Scotsman Donald Ross, and restored in 1998 by renowned golf course architect, Dr. Michael Hurdzan. With its difficult greens and hilly, tree-lined fairways, the Burlington Country Club is one of Vermont's premier venues for golfers. The ballroom, grillroom, patio and grounds of this beautiful facility offer panoramic views of Vermont's Green Mountains making the Club a well known choice for any affair.
POSITION DESCRIPTION: MUST be creative and passionate about the culinary arts! Planning and Creating menus. Food quality and consistency assuring that food preparation is economical and technically correct while complying with or exceeding all BCC quality standards. Production of Meals. Establishing and maintaining contact with vendors; negotiating with vendors and salespeople to insure correct pricing and quality of merchandise. Hire and train staff effectively. Supervising and coordinating the work of the kitchen personnel. Act quickly and decisively in order to address member concerns and problems. Motivate all staff in order to keep moral high with patience and a sense of humor. Install inventory controls and receiving procedures. Communicate concepts clearly and answer questions and concerns. Develop budget with Clubhouse Manager and meeting the provided budget. Assure that proper safety, hygiene and Vermont Board of Health and Sanitation guidelines are followed. Executive Chef will work in cooperation with the assistant manager and appropriate membership committees in the planning of all banquets and member social and culinary events. He/She will be enthusiastic, energetic, engaging, creative and highly visible to the staff and membership.
POSITION QUALIFICATIONS: Eight (8) years experience in a private club or high volume and fine dining restaurant required. Five (5) years of supervisory experience with management responsibility required. Bachelors Degree in F&B and/or course certification from an accredited Culinary Institute is REQUIRED. Prefer a Certified Executive Chef (CEC). Extensive skill, knowledge and experience in all aspects of the kitchen operation. Interpersonal service skills and organization skills to plan time effectively. Must have basic computer skills in Microsoft Office. Must be able to work without direct supervision. Must be able to handle a fast-paced, busy, and somewhat stressful environment, and work under pressure and meet deadlines with particular attention to detail. Must possess the ability to access all areas of the restaurant, the ability to move frequently & freely about facility, withstand prolonged standing, stretching, bending, kneeling, lifting and carrying items weighing up to 50 lbs. without restriction, work in close quarters or small rooms and is occasionally exposed to hot, cold, wet and/or humid condition and work environmental factors include noise, dust, and smoke. Must be able to communicate effectively in English, in both written and oral forms. Must have interpersonal skills to deal effectively with all business contacts. BCC standards. Work varied shifts, including weekends and holidays. High School diploma or equivalent is required. Proof of eligibility to work in the United States.
Compensation: Commensurate with experience
